Paolo Sartori opened shop in 1939 with the aid of Count Bolognese. He would go on to being a trailblazer in cheese production in the US including bringing Asiago production to Wisconsin as well as the pioneer of the first pre-grated Parmesan with longer shelf life. His company was also the first U.S. cheese exporter to Italy and Japan.
